Eating raw or undercooked beans poses a health risk because of the potential presence of lectins, according to the European Food Safety Authority (EFSA).

The European Commission asked EFSA to conduct an assessment because of illnesses linked to the consumption of raw or undercooked pulses. This is of growing importance as more consumers opt for raw or minimally cooked plant-based diets.
