A Parisian restaurant has promised a pizza experience like no other. Order your pizza and, within five minutes, a robot would develop your pie from zero, no human hands required. It was the vision of Pazzi Robotics, a French startup that merged advanced automation with the Italian culinary tradition.
For a while, the company seemed ready to redefine the way people see pizza. However, after nine years of innovation and effort, Pazzi closed in 2022. This result raises an urgent question: Pazzi failed because it was ahead of its time, and should the pizza manufacturing robots have another chance?

The Rise and Fall of Pazzi: A pioneer vision
Pazzi Robotics was not only another food technology company. The team obtained five patents and worked with the pizza chief of the world-champion Thierry Graffagnino to improve his recipes. They received more than 3,000 requests from around the world. Their robot could knead the dough, spread the sauce, add fillings, cook, cut and box a pizza without any human help. The technology impressed many people, and CEO Philippe Goldman even obtained the title of “most innovative CEO in the fast food industry”. Despite these achievements, Pazzi could not find a buyer and had to close.

Goldman shared his reflections on LinkedIn after closing the company. He expressed his sadness and frustration, noting that Pazzi had achieved many of his objectives and established solid partnerships. He also thought about the challenges. According to Goldman, hardware startups require a lot of time and money to succeed. He found that the robotics ecosystem in France was not mature enough to support such a business. He also realized that the management of a technological business and a restaurant simultaneously posed unique challenges. The two industries have different cultures, expectations of customers and commercial models.
Goldman admitted that he had not used his board of directors enough to solve difficult problems and was slow to build a solid management team. He stressed the importance of hiring good people from the start and acting quickly when someone is not a good choice. Despite the disappointment, Goldman remains proud of what Pazzi has achieved and thinks he paved the way for future innovators.

Have location and culture played a role in Pazzi fate?
The story of Pazzi raises another question: have its French roots contribute to its difficulties? Would the company have been more successful in Italy, where pizza is a national treasure? Goldman stressed that French culture tends to be wary of robotics, especially in the food industry.
He also noted that the public and institutional financing of material projects is limited in France. Perhaps an Italian launch would have given pazzi robots more authenticity and acceptance. Or maybe the world was simply not ready for the pizza made in the robot, it doesn’t matter where it is from.

The Pazzi’s advanced system was based on a mixture of robotics, artificial intelligence and machine vision. It could operate 24/7, producing pizza in less than five minutes. In addition, AI has monitored ingredient levels, a follow -up flow and an optimized workflow for maximum efficiency. This has reduced minimized downtime and waste. However, as with many automation technologies, some criticisms concerned with pizza of robots to take jobs traditionally occupied by people in the catering industry.

Should the world give a second chance to pizza robots?
Although Pazzi has disappeared, the need for automation of food services continues to grow. Technology has worked. Customers appreciated a quick, consistent and high quality pizza without almost no human involvement. Maintenance shortages and the increase in costs always question the catering industry.
The demand for effective solutions will only increase. So should pizza manufacturing robots have another chance? Perhaps the next attempt will take place in Italy or in a market more receptive to food technology. Or maybe certain traditions, such as pizza, are not yet ready for a robotic revolution.
